Here’s the recipe for my Turkey Stuffed “Pumpkin” Peppers! 🎃😊⬇️ – WHAT YOU NEED: (for about 6 peppers) 🎃 6 large bell peppers, 2 lbs ground turkey, 5 cloves garlic (minced), 1/2 sweet onion (minced), 2 tbsp fresh chopped parsley, 2 tsp cumin powder, 3 tsp kosher salt (divided), 1 1/2 cup tomato sauce, 3 cups cooked brown rice, 1/2 cup shredded mozzarella/ or cheddar cheese, 2 tbsp finely snipped chives and olive oil – HOW YOU MAKE THEM: 🎃 Heat oven to 400 degrees. 🎃 Cut tops off of your peppers, remove all seeds, hollow and rinse out. 🎃 Next,”carve” pumpkin faces (eyes, mouths, etc.) into your peppers. 🎃 Place hollowed peppers in a microwave safe dish and add about 1/2 cup of water to the dish. Microwave for about 5 minutes or until peppers are just slightly softened. Set aside. 🎃 Pour a little olive oil into a large non-stick skillet and heat on medium heat. 🎃 Add onion, garlic and parsley to the pan and saute for about 3 minutes. 🎃 Add ground turkey, 2 tsp salt and cumin and cook meat for 4 to 5 minutes until meat is completely cooked through. 🎃 Next, add 1 and 1/2 cups of tomato sauce. Mix well and simmer on low for about 5 more minutes. 🎃 Combine cooked rice and meat together until well mixed. 🎃 Spoon turkey mixture into each pepper and place in a baking dish.
